Cebu’s Coffee Scene Just Got Personal, Thanks to Third Wave Coffee

Believe it or not, coffee has had its waves of movements—three waves to be exact—each one marking a shift in how we consume, experience, and understand our daily cup.

The first wave traces back to the 1800s, when coffee became a staple in households and morning routines. It wasn’t about savoring high-quality cups—it was about getting that energy jolt to jumpstart the day. Convenience trumped complexity.

Then came the second wave, a response to the watered-down, instant coffee of the past. With it rose the dominance of large coffee chains and the cultural moment of “coffee with friends.” Here, coffee transformed from a mere necessity to a social ritual, with better beans, baristas, and brewing.

Now we’re in the thick of the third wave, where coffee is celebrated as an artisanal craft. This movement puts a spotlight on origin, roast profiles, ethical sourcing, and brewing innovation. As coffee drinkers became more engaged in understanding the coffee-making process and the ingredients used, boutique cafés came to the fore to satisfy growing curiosity.

Coffee isn’t just consumed—it’s explored.

One café in Cebu lives and breathes this ethos. Fittingly named Third Wave Coffee, the shop doesn’t just sell brews—it champions a movement. Flip through their menu and you’ll find this declaration:

“We’re here to share the vision of the Third Wave Coffee movement: treating coffee as an artisanal experience, not just a caffeine fix,” co-founder Kaye shared.

And their offerings walk the talk. Alongside staples like cortados, flat whites, and cappuccinos, you’ll find more playful sips—like the floral-forward Earl Grey Bloom or their signature Vanilla Muse. Not in the mood for coffee? Third Wave also serves Ube Lattes, Berry Matchas, and the vibrant Strawberry Sparkle.

“At Third Wave, specialty coffee isn’t just a buzzword — it’s the heart of what we do. We’re all about quality beans, sourced with purpose and roasted to perfection. We proudly support local roasters here in Cebu City, because we believe great coffee starts with community.”

Nearly six years in, Third Wave Coffee has grown into something more than a café. It’s become a familiar refuge—a spot where students grind out deadlines, friends swap stories over board games, and strangers become collaborators at one of their many creative events or workshops.

“It’s become a safe space. A cozy little corner where you can plug in and power through solo work days, chill with friends or family over board games and belly laughs, or even find your people through creative events and workshops,” says Kaye.

“What started as a love for coffee has turned into a space full of good energy, good convos, and great connections.”
